Here’s how I make Apple Cabbage Bake, one of our favorite fall recipes. I love it because the ingredients are seasonal and simple and it’s ✨incredibly easy✨ to make. I serve it with pierogies on the side (quickly sautéed in butter) and by some miracle all three of my toddlers like it.

The main spice in this recipe is caraway. It has a warm, slightly anise flavor that reminds me so much of autumn. In folklore, baking with caraway seeds inspires love when eaten and protection when carried. If you aren’t a fan, you could substitute mustard seed (crushed a bit first).

You will need:

- 1 small green cabbage (cored & cut into strips)
- 1.5 lb. sausage or substitute, sliced
- 2 apples (cored & cut into wedges)
- 2 tsp. caraway seeds
- 2.5 tbsp. olive oil
- 2 tbsp. apple cider vinegar
- sour cream and dill (for serving)

Directions:

1. Preheat oven to 425°.
2. In Dutch oven, toss cabbage, sausage, apple, caraway seeds, and olive oil. Season with salt.
3. Roast uncovered on lower rack for a half hour, checking occasionally to ensure your cabbage doesn't burn. Cover and bake for an additional 20-30 minutes until cabbage is just tender.
4. Stir in vinegar.
5. Serve warm with sour cream and fresh dill.
